Personal keto cake

- 25 g Eggs
- 23 g 40% Heavy Cream
- 12 g Butter, European melt in microwave
- 7 g Oil, Olive
- 3 g Vanilla Extract
- 5.5 g Coconut Flour
- 5 g Cocoa, Hershey's (Unsweetened)
- 3.5 g Truvia
- .5 g Baking Powder
- .5 g Baking Soda
- .5 g Xanthan Gum
- 35 g 40% Heavy Cream Whip in Magic Bullet blender to make whip cream
- 10 g 10% Fruit Any berry is a 10% Fruit, such as strawberries, raspberries or blueberries

- Preheat oven to 350° degrees.
- Weigh all ingredients on the digital gram scale.
- For seasoned keto cooks weigh all WET ingredients in one bowl on the gram scale, tearing back to zero after each ingredient is added. Then weigh all DRY ingredients in another separate bowl, tearing back to zero after each ingredient is added. For those just starting out with the keto diet weigh each ingredient in a separate bowl for complete accuracy. Mix mix all ingredients together.
- Stir well.
- Grease pan with butter.
- Cook for 15 minutes. Test with a toothpick or gently touch center to see if it springs back.
- Whip heavy cream in a Magic Bullet (or similar) blender.
- Add your keto kids favorite berry.
